So much to share!

So apparently I'm slacking on the blogging again... :)
But at least that means one big update for today!

A lot has happened in the past week! First, and most importantly, my new brother-in-law Kent, and his {now fiance} Dreama got engaged! :) Congrats you two - we're so excited!!

Eric and I had fun last weekend carving pumpkins. We drove 20 miles east of town to an awesome little farm to get them, too.







And here's the finished products! Obviously, I haven't been able to put down my paintbrushes lately... :)



And we finished off the day with a DELICIOUS dinner - Eric picked up a packet of McCormick Mojito Lime seasoning for chicken and it was AMAZING! You've got to try it!

Delicious Recipe

I thought I would start the week off by sharing one of my (newer) favorite recipes! Granted, I don't cook very often because I have a wonderful husband that would rather cook instead :), but I got to take over the kitchen and make this over last weekend.

Although the original recipe is from Real Simple (see link here), I like to tweak it a bit and make it more of my own...

Caroline's Favorite Orange Chicken and Potatoes Slow Cooker Recipe
(serves 2)

Ingredients:
-2 chicken breasts
-salt and pepper
-6 red potatoes
-1 orange, cut into slices
-1 can Campbell's chicken broth
-1 tablespoon honey
-dashes of thyme, basil, and oregano

Directions:
-cut the chicken into small squares and season with salt and pepper
-combine broth, potatoes, chicken, honey, and seasoning in the slow cooker
-place orange slices along the top layer of the food
-set the slow cooker to high and cook covered for 2.5-3 hours
-enjoy :)

Weekend Wrap-Up

Eric and I made the long (5 hour!) drive to Arkansas this past weekend to see the hogs beat Auburn! It was so great to be home and see family and friends...I wish we could have stayed longer!

I even got some shopping in there, too {thanks Mom!!}. One of my wonderful friends, Anna Marie, made a wreath last week that I just fell in LOVE with! She was even nice enough to put one together before we left! Just because we're in Tiger country doesn't mean we can't show our Razorback pride! :)

Houseguest for the weekend :)


It's our 2 month anniversary! Time flies!! :)

Happy October, too!

So, this weekend my new sis-in-law is making the drive to Columbia! We're so excited to see Amanda!



I think we have almost everything planned out - from Shakespeare's for lunch to the movies (her fav!).

Other than that, the only news I can think of is that I was SHOCKED this morning to witness Eric actually TURNING UP the dial with a country song on (and then actually singing with it! - Mom, you wouldn't believe it!). Looks like I've helped create another follower of country!
